Delicious… sweetly charred to perfection!
2 lbs carrots
2 teaspoons ginger powder
3 tablespoons honey
3 tablespoons butter
1 sprinkle of salt
Preheat grill to medium heat (surface temp of about 400 degrees). Prep the carrots by cutting off root and end tip. Cut in carrots in half lengthwise. Melt butter and mix remaining ingredients until well blended. Place carrots on grill and brush with honey glaze. Flip and glaze carrots every 5 minutes until tender or charred to perfection. Remove from grill and sprinkle with salt.

Servings, about 6 skewers
24 ounces cod filets
2 tablespoons freshly squeezed lemon juice
2 tablespoons melted butter or olive oil
1 tablespoon minced garlic
2 bell peppers, cut into 2 inch squares
1 medium onion, cut into 1 inch wedges
4 ounces mushrooms, 1/2 inch slices
1/4 cup fresh parsley
1/4 cup thyme
salt and pepper to taste
Preheat grill to medium high heat. Cut cod into 1 inch cubes. In a medium bowl mix all ingredients and marinate for 1 hour, occasionally stirring. Thread fish, bell pepper, onion and mushrooms onto the skewers alternating between fish and vegetables. Place on hot grill for about 10 minutes or until cooked through. It’s so good!
