Hello Fall, and hello squash! This is a picture of what Fiona and I had for supper the other night. It’s butternut squash. “It’s glorious, mama. I want more!” Fiona said.
So, here is what I did. I put the entire thing in the oven because I am way too busy lazy to try and fight with a hard squash.
I baked it at 350 until it seemed like was cooked. I took it out, let it cool slightly, peeled it, scooped out the seeds, and sliced it. Then, I drizzled. OK, ok I used a heavy hand and covered it with honey and sprinkled with cinnamon. The first go round we had it with a bit of butter, the second helping was just honey and cinnamon. Fiona loved, I loved it, and we think you will love it too.
