I’ve been pretty keen on quinoa these days. It’s all kinds of wonderful. High protein with all 9 essential amino acids, gluten free, and my mister doesn’t realize it is not a starch. Soooooo…. when he says “I must have a protien, starch and a vegetable for every meal.” I no longer roll my eyes. I grab the quinoa and make us all happy! It is perfect for tossing in summer salads, or serving as a side dish ( I cook it in home made vegetable broth for extra flavor) In fact, we had these the other day and we all loved them. Even the king carnivore agreed that these bad boys were very hearty and absolutely delicious!
Quinoa and garbanzo bean burgers.
1/4 cup cooked quinoa
1 cup cooked garbanzo beans slightly mashed
3/4 cup panko bread crumbs
1/4 cup graded parm
handful of cilantro minced
tablespoon cumin, salt and pepper.
Make into patties and fry them up in butter (of course olive oil WILL work, but you know…me and butter we have this thang).
