Zucchini Stuffed Chicken Breast

4 chicken breast

2 zucchini

2 tablespoons stone ground mustard

Salt, pepper, olive oil fold up

Cut zucchini into strips, pound out chicken breast, spread mustard on one side of the chicken breast

lay zucchini strips over mustard

roll up stuffed chicken breast, drizzle with olive oil

Place seam side down on a baking sheet.

Season with salt and Pepper.

Bake at 375 for 40 minutes or until internal temp reaches 165
